PROCESSING

Stock upon arrival, are housed under cover with an adequate potable water supply, where they are rested until processed. Animals are subject to post-mortem inspection by both Government Veterinarians and Company Quality Assurance personnel to ensure they are in optimum health and meet hygiene criteria.

The plant has a single chain, inverted dressing system and is manned by highly experienced personnel.  Hygiene and HACCP based procedures are followed right through the process. 

The plant is EU and USDA approved and meets the tightest hygiene requirements.  Processing is followed by ante mortem inspection carried out by independent inspectors.  The carcasses are then graded and subjected to an AC & A (Accelerated Aging and Conditioning) regime to ensure tenderness of the final product.
